may i ask wich version of stubby and cloudflared is build in

My general approach is to use apt install if package is available. If not then find official (or official community) repo and apt install. If not then find official binary.
From memory, cloudflared is official binary so it is latest version as at whenever I rebuild. Stubby is debian package of whatever version Pihole comes with (I.e. unlikely to be latest nor updated).
