ddl/dxf: refine internal docs and some log refactor

What problem does this PR solve?

Issue Number: ref #57497

Problem Summary:

What changed and how does it work?

• previously they are scatter around in different files, it's harder for starters to understand how DXF works
• add docs for service scope and resource abstraction
• refactor some logs and comments

I'm waiting for a pingcap member to verify that this patch is reasonable to test. If it is, they should reply with /ok-to-test on its own line. Until that is done, I will not automatically test new commits in this PR, but the usual testing commands by org members will still work. Regular contributors should join the org to skip this step.
